I've slipped up, now and then, not enough to gain any weight, but just enough to slow down my losing. I'll have to get back on track, and stay there, avoiding even the smallest of temptations. I'll get it done, as I've come too far to give up now.

Frittata Friday, and I made my frittata as planned. It was pretty good, but the next time, I make it, I'll use a combination of medium cheddar and sharp cheddar. It needs the extra richness of a sharp cheese. Never-the-less, as is, it was a worthy effort, and pretty tasty. :-)

Tomorrow is another Frittata Friday, and I've been planning this one aaaall week long. I like Mexican chorizo and eggs, so this one is going to be kept simple. This week's frittata will contain: Mexican chorizo, queso fresco, medium cheddar cheese, sliced black olives, and green onions. The garnish will be a fresh salsa, equally simple, which contains: chopped tomatoes, jalapeno peppers, and sweet onions. When it comes to good food, sometimes, less is more; and this frittata holds the promise of being simply delicious. :-)

I decided to try an experiment for a late lunch today; turkey bacon wrapped pork sirloin chops, and pan grilled zucchini. This is a one pan meal, and since the chops are cut thin, they don't take any longer to cook than the zucchini. It turned out pretty good. I wish I'd used the applewood smoked bacon, that was used in last night's frittata, which would have made it better, but never the less, it was good. :-)

Well, it's Frittata Friday again, and for the first time in weeks, I'm actually making a frittata, on a Friday. This one, with a minor addition of some zucchini, is just a quicker take on a Quiche Lorraine, made into a frittata. It's loaded with applewood smoked bacon, swiss, and gouda cheeses, and of course a bit of onion, and garlic; I also dusted it off with some Spanish smoked paprika. It should be very tasty. Have a great weekend, everyone, and if you think about it, make a frittata. :-)
