This last week, in this challenge went well, with a few minor mistakes, but overall it was a success, seeing as I still lost some weight. My total net carbs for the week was 108.12g, with a daily average of 15.44g; and I'm down another 3 lbs. Not quite the big drop that I experienced, last week, but I know where I messed up, and won't be making the same mistakes again. However, since these 4 weeks, on this challenge gave me a net loss of 25 lbs, I'm calling that a win! The battle doesn't end here since I intend to win the war, but I'm certainly off to a great start. Thanks for all the great support.

Tomorrow is Fat Tuesday, which also means it's Paczki Day. It also means that paczkis , those delicious, filled, Polish pastries, that people are willing to get up at 4:00 in the morning and wait in frigid temperatures, and pouring rain, to purchase, by the dozens, are back. The good news is, though in past years, I would have fallen prey to the temptation to at least secure some of those tasty jewels, at my local supermarket, where they are also on sale, and available in abundance; being in the midst of my current challenge, they pose no threat to me at all. I've already walked past displays of them without even hesitating to see whatever flavors were being presented. If those Valentines Day cupcakes, and assorted goodies, didn't suck me in, then these don't stand a chance either. :-)

Every once and a while I decide, on a spur of the moment, to make some soup. That's what happened tonight. I call it Hodgepodge Chicken & Vegetable Soup, and used whatever veggies I happened to find in the fridge tonight; in this case it was broccoli, zucchini, baby bella mushrooms, shallots, smoked chicken, an egg and some chicken broth. I added a few seasonings, as well, and it turned out great. It was a great way to use up some leftover fresh veggies, and I'm sure I'll be making it again; however as the name suggests, the recipe will change every time I make it. If I get into the habit of making this, I may change the name to My Saturday Soup; the possibilities are endless. :-)

Well, it's another Frittata Friday. I initially planned on having another Spinach and Artichoke Frittata, but abandoned that idea in favor of a much tastier idea which I dreamed up today. I just got it out of the oven; a frittata with Broccoli & Smoked Beef Brisket, with Baby Bella mushrooms, shallots, garlic, fontina, and shredded cheddar cheeses. Now comes the taste test. And, the verdict is.......SUCCESS!!! It's very tasty, and one of the best frittatas that I've made yet! Anyone else, making frittatas today; I hope your's turned out as well. This is going to be an awesome breakfast before going to church on Sunday.

This third week, into this challenge, has been interesting and surprisingly successful. My net carbs, for the week was a total of 105.81g, with the daily average being 15.11g per day; the result being, I'm down another 10 pounds. Hoo Yaa! Thank You Jesus!!! If I'm not back "in the Zone" yet, then I'm certainly close to it. Oh Yeah! :-) I hope everyone else's week went just as well. See you at the final weigh in.
