Chicken and Spanish Rice

A perfectly balanced meal that's high in flavor but low in fat.

Directions

  1. In large skillet, sauté onions and green peppers in oil for 5 minutes on medium heat.
  2. Add tomato sauce and spices. Heat through.
  3. Add cooked rice and chicken, and heat through.

The recipe sounds good but directions or incomplete or grammar incorrect. Is the chicken cooked prior to adding to rice and other ingredients?

This looks good, however the portion seems to be very large (checking the chicken used, it appears to be 2.5 lbs of chicken to start with) I would cut the recipe in 1/2 to feed my family of 4 (DH likes a large serving!!)

Make it with Basmati rice and olive oil and this would be perfect for GI.

recipe is very good...substituted vegetable oil with olive oil.. i used brown rice and added red and yellow peppers...

This recipe is very good, I also added fresh tomatoes and substituted vegetable oil with canola oil and used brown rice instead of white rice to make it healthier according to the Flex Plan.
