Garden Vegetables with White Beans Soup

A healthy vegetable soup with navy beans added for protein.

Directions

  1. Spray a dutch oven with non-stick spray and over low to medium heat, add onion and garlic, and sauté 4 minutes or until tender.
  2. Add everything else except zucchini and mushrooms and cook 30 minutes.
  3. Add remaining ingredients and cook again to preferred softness.
