Cauliflower Fried Rice
A low-carb, delicious fried rice.
Ingredients
Directions
- Thinly slice carrot. Use a food processor or a cheese grater to grate the raw cauliflower, this should make about 3 cups of grated cauliflower.
- In a large sprayed pan, on medium-high heat saute the onions and garlic until the onions start to change color, about 3-5 minutes.
- Add peas, carrots, and water chestnuts. Cook for 3-5 minutes, carrots should start to soften.
- Add cauliflower, soy sauce, and egg whites. Cook for 5-7 minutes.
