Curried Chickpeas and Spinach
Great vegetarian dish, serve with rice.
Ingredients
Directions
- Heat oil in a pan and cook onions until glassy
- Add cumin, tomato
paste, salt, pepper and sugar. Stir over medium heat for 5 minutes.
- Add chickpeas and spinach. Reduce heat, cover and simmer for 20-
30 minutes, stirring occasionally.

Reviews
Made this recipe with small changes. I added a whole can (1/2 cup) of tomato paste and a splash of vegtable broth to thin it out. The recipe didn't have curry listed, so I added 1tsp and increased the cumin to 1tsp. The directions called for sugar and I added 1/2 tsp to the recipe. My family loved it, it has a wonderful flavor.
