Well Lent on Keto is pretty hard...I can do this if I just camp out at my house on Fridays! I usually do baked fish with melted butter and a salad. My MIL invited us over for dinner and is making enchiladas. She made mine special with just cheese due to Lent but it still has tortillas and her sugary sauce all over it...what to do what to do? ugh...

can you just eat the inside and avoid the tortilla and sauce as much as possible (if those are what's causing the problem for you)? then fill up on salad! you could offer to bring the salad, that way it has what you want in it?

If it were me, I'd just eat an enchilada. Slowly. Savoring each bite. Enjoy it thoroughly and then resume the diet plan the next day. It's a diet, not a Federal law. If MIL asks why you aren't eating more, praise the enchilada up and down, how delicious it is, but, "My appetite is a little off today... wish I could do this more justice." That kind of thing.

Berley1 gave a good idea. Idea follow it, but wouldn't worry about the tortilla. One won't hurt your diet. I belong to TOPS and had a good week even with having a chicken enchilada. I had Tuna casserole Wednesday and still lost a pound this week. You can do it; I have faith in you.

personally, i'm a long time low-carber so the tortilla is something i wouldn't eat, but if it fits into your woe, definitely go for it! no reason to risk offending your MIL if you don't have to. :o) i just suggested avoiding it because i see that HotCakes is also low carb/keto. it sounds like you have your woe dialed in, DMZ, congrats on the 1 lb loss!

So I offered to bring a salad and I'm planning on putting cheese, guacamole and salsa on my salad :) I just got back on my Keto horse and I'm not going to compromise

Lent is really difficult for low carbers. I find myself eating tuna salad on cheese crisps too often :) On Fridays, if your family is adventurous, there is a cauliflower-based sushi "rice" recipe floating around out there from which you can make a lot of good sushi rolls. It's something to offer to make with them. Of course, YMMV.

If it was me, I would let my MIL know that I was on a special diet and couldn't eat some things. Eat something filling before I leave my home as not to be starving and give in. Or eat the insides of the enchilada and let it go. No we can't be rude but if you are dedicated to your diet your MIL should understand.

Good idea on bringing the salad!! Fill up on that and eat the inside of enchilada. If you can do it without her finding out you didn't eat the outside, even better...does she have a dog?? Or paper napkins...are you close enough with your MIL to explain why you don't want to eat the outside and sauce?? Ask for her help with your willpower to stick to your WOE...get her on your side with this...good luck, no matter WHAT you decide to do!!

I know it's too late now but you could let her know that there is low carb tortillas, maybe even buy her a pack to keep in the freezer for next time...
