Low-carb peanut butter fudge.
Ingredients
Directions
- Melt the butter and peanut butter together in the microwave on high for 1-2 minutes; whisk well.
- Whisk in the cream cheese until well blended and smooth.
- Whisk in the Splenda then the soy protein powder and blend well.
- Line a 7 x 5" baking dish with wax paper or non-stick foil.
- Spread the fudge mixture in the pan and chill or freeze until set.
- Cut into 20 squares. Store in the refrigerator or freeze.

Skip the soy and add a square of old fashioned Bakers Chocolate to 1st 2 ingredients in microwave. Not a fan of Splenda, use 2-3Tbsp Xylitol after microwave step.

This is a great snack quencher for me at my worst time between lunch and supper. I like it better than a WW cookie!!

I made it with PB2 powder, vanilla whey isolate (protein), and stevia in the raw. Tastes like a diet food, but it works for an emergency craving!

This was OK. It was a bit dry, but you only needed a tiny piece to satisfy your cravings for sweets. It was really a nice alternative.

My husband actually liked this and he is really fussy. He only likes his mothers real PB fudge recipe that I normally make, but he is a diabetic and I am dieting so I tried this one out and not half bad.....will make again.

Excellent!!! I even cut down on the caloires by using fat free cream cheese and low fat peanut butter. It's still wonderful!
