Ingredients
Directions
- Pre-heat a non-stick skillet or griddle to medium heat.
- In a blender add the dry mix oatmeat and flax seed. Blend for 3-5 seconds.
- Add the cottage cheese and egg. Blend for further 3-5 seconds.
- Add sweetner to taste.
- Spoon the mixture on to a skillet or griddle. Flip when golden. Do not overcook.
- Serve with your choice of toppings - low sugar syrup, fruit or jam.

I haven't had a pancake in over six months!!! These were DELICIOUS! They are a little thin but I really didn't care! Used the "I Can't Believe It's Not Butter" spray with it as well.

I make 3 servings out of this. I don't usually eat too much for breakfast but will have a mid morning snack to keep my glucose levels from getting too low.
