Lite Pancakes

A skinny pancakes recipe from my Grandmother.

Ingredients

Directions

  1. Beat eggs.
  2. Add milk.
  3. Add baking soda.
  4. Add vegetable oil.
  5. Mix well.
  6. Add sugar substitute and mix.
  7. Add flour mix.
  8. Cook over medium heat until brown. Flip over and repeat.

This might fit the Atkins by subbing cream for the milk, use olive oil instead and sub flax meal for the flour. I'll try it this weekend!
