Finished my 3 day Vegan reboot, actually went almost 4 days. Did have shrimp with my dinner last night. I lost a total of 4 pounds which was a bonus, most likely water. The most beneficial result of this 3 day challenge, was getting back into the habit of having 3 well balanced meals a day! Which is great for maintaining blood glucose levels (recently diagnosed with Type 2 diabetes). During this period I have also been researching meal plans for diabetics, and the importance of fiber rich carbs. So this morning I will plan out my meals for the next 3 days. Will be mostly vegetarian, I like Vegan but need my fish, seafood, eggs and occasional chicken/turkey. Will try to make wise choices using Glycemic Index, and try to keep net carbs to around 100gm per day. This is much higher than the 20gm I was doing on Keto, but I think this plan may be better for me. I am also going to monitor and document my blood glucose and blood pressure levels. I am still in denial about the diabetes diagnosis, but can't deny that I feel better than I have for the last month or so when I was eating mindlessly. Now, on to the next 3 days! Gotta love summer veggies!

Day 2 of Vegan Reboot. Really enjoyed my "green lunch" Yummy. Wish the fritters got more color, next time a different pan and a bit more oil. So we have 2 fresh pea and tofu fritters, with a baby kale and cucumber salad along with mashed avocado with lemon and garlic. Added the cherry tomatoes for color...served on my favorite lunch plate, makes it feel special.

Restarting today. Was on Keto for 3 weeks, lost almost 11 lbs, but then went on vacation and came back depressed and started eating mindlessly. Miss Vickie's chips and wine became my best friends, along with take out pizza, burgers and fries. Gained back 7 lbs, blood pressure is up, so are blood sugar numbers, along with chest discomfort and fatigue! I now wake up at night with atrial fib, and the flutters seem to last longer sometimes hours...my cardiologist would not be happy with me. So yesterday I started a 3 day Vegan detox, and then I plan to switch to Vegan 80% vegetarian 10% and carnivore 10%. I really want to switch from animal based protein to plant based, without giving up fish and seafood which I really really love. I think this may be better for my body, given my age 69, heart condition, high blood pressure and diabetes. I know the carb numbers will be much higher than I am used to, but I could to choose complex carbs. I think for me,although weight loss is rapid, Keto is just too restrictive. and I am just tired of eggs, butter and meat. Yesterday's meals were great; Breakfast was Strawberry Bulgur Bowl;Lunch was Tabbouleh with Avocado; and Dinner was Lemony Chickpeas pasta with fresh peas and macadamia nuts.
