Shredded buffalo chicken, pineapple, and a salad with bleu cheese vinaigrette. The dressing was a miss. I promise that's pineapple and not a stick of butter as one of my kids suggested.

Success: Fourth week in a row of dropping 2.5 lbs or better. I love this consistency!

What Did I Do Different This Week?: Two 20-hour fasts!
Good: Other than Sunday, I never exceeded 1,300 calories per day. Based on everything I've read about intermittent fasting, all of which are from scholarly sources, my weight affords me the ability to cut a significant number of calories as long as what I'm eating is nutrient-dense. So, I've been sticking solely to Paleo/Whole30 and avoiding grains and pasta completely.
I also started using an app called Cronometer to track calories. I like FatSecret and I will will continue to use it for motivation. However, Cronometer also tracks micronutrients which is very important considering my low calorie intake.
I am super happy that I completed a 20-hour fast two days in a row without any issues. I attempted a 20-hour fast last week but felt terrible afterwards.
Bad: Valentine's Day was last Sunday. I may chicken chardonnay for Jessica. I bought 2 bottles of wine for the recipe and only ended up needing one. So, Jessica and I split the last bottle. After dinner, the kids and I made chocolate-dipped strawberries. Overall, I went over my max calorie limit by 500 calories, including the wine. So, Monday morning, I was not surprised to see that I gained a couple pounds. I attributed most of the weight gain to water retention. Tuesday morning, I was still disappointed to see that I was holding on to the weight despite fasting for 18 hours Monday. I fasted 19 hours on Tuesday and 20 hours on Thursday and Friday. Thursday morning, I was relieved to see the scale finally move again with a 1.8lb drop. This morning, was my "official" weekly weigh-in and I have managed to consistently lose 2.5 lbs per week for the last four weeks. At this rate, I will reach my goal mid-summer and I'll be able to get back on one of my bikes by the end of April - just in time for nice riding weather!

Post-Workout, 2nd, and last meal of the day. Good day! Completed a 20-hour fast without any issues and road my stationary flat-out for 15 minutes at 150 watts. I haven't been able to do that in over 6 years! My road bike calls to me!

Last strawberries of the season? Went to the grocery store yesterday and they were sold out.
Also completed a 21-hour fast. It's getting easier!
