I got back on schedule with my new recipes, yay! I tried the Eggplant Caprese Bake tonight. It was ok. It was real easy and turned out the way it was supposed to, but I would like it better with a little marinara sauce instead of the tomatoes. I am not sure what that would do to the points. Even though it wasn't my favorite recipe I count it as a success. I didn't burn, melt or stink up the house. :)
Oh I noticed that ALL my buddies lost this week!!!! WAY TO GO!!!!!!
