I got a pool workout in today. Energy level is up. Also got a lot of my household chores done. Yeah for me!!! I am a pastry chef and it is fun finding new diet recipes for leftover bananas and strawberries. First time replacing sugar with splenda, we will see how everything comes out. Talk to ya tomorrow.

I'm no chef, but I am a pretty darn good home baker. Breads (banana, zucchini, ect), and cookies have turned out just fine for me using splenda instead. I haven't tried it with any of my more complicated recipes because all they have in them is white flour and sugar anyway, so no point in trying to sub in splenda. I'm dying to try the splenda brown sugar and baking a streusel topped banana bread that I used to love. Let me know how your baking goes! :)

Last night I made a coconut banana bread with a lime glaze. I used whole wheat flour, splenda, no-fat yogurt, etc. I thought it was pretty good, but my husband thought it was a brick. He is not used to this healthy eating stuff. He doesn't like it. So far good for me and that is all that counts. I am trying some strawberry muffins today.
