Substitutions
So my mom is gone for this week. For 99% of my life, it would mean pizza, KFC, and soda every single night. All the stuff she would prefer we not have!
This time, I looked through the freezer, took note of every single meat and fish we had on hand, and looked for recipes on foodnetwork.com. Last night I made some broiled fish with a butter and lemon sauce, and here comes the point of this post.
I know exactly what my mom would have made with this: Rice. I'm not sure why, but for some reason the family has ALWAYS had fish paired with some rice. So what did I make last night? A bag of frozen carrots.
Was the meal optimal? No, melted butter and carrots are not the BEST possible (Carrots are sorta high in carbs for a veggie). However, was it better than fish with rice? Yes. Was it better than a big bucket of KFC? YES!
Take home message: If you are responsible for food for family or just for yourself, brainstorm substitutions. Veggies over potatoes. My dinner was a hit - Grandma said the carrots were "delicious" - Nobody missed the rice!
Also, remember that on Tuesdays you can get a foot long Subway sandwich for 5 dollars, $2.50 per 6 inch. After 4 PM every day the 6 inch sandwiches are $3 if you buy at least four. If you're pressed for time, try this instead of Wendy's or Mcdonalds. A little jaunt into a grocery store immediately after can yield a bag of baby carrots to replace the chips.
YOU HAVE OPTIONS! YOU ARE IN CONTROL! JUST BECAUSE YOU HAVE ALWAYS HEARD "If you don't have any time to make a dinner, grab a bucket of KFC" DOES NOT MAKE IT TRUE!
