Thai Green Curry

Flavorsome Thai vegetable curry with coconut milk and tofu.

Ingredients

Directions

  1. Chop tofu. Stir fry tofu and vegetables.
  2. Mix coconut milk, green curry paste, fish sauce and lime juice together. Whisk until paste is dissolved.
  3. Pour mixture into wok with tofu and vegetables. Heat through.

Very nice! Even better when topped with fresh basil and mint, since they seem to up the herbal "freshness factor" I associate with Thai food. The recipe is fine as it is, but if I were going to modify it, I would add a few lime leaves, a few slices of galingal root, and substitute vegetable broth for the coconut milk... but then its Jungle Curry, not Green Curry.

I substituted oyster sauce for fish sauce. Best thrown-together curry ever. I recommend Uncle Ben's basmati rice you can steam in the microwave to have with this.
