Thai Green Curry
Flavorsome Thai vegetable curry with coconut milk and tofu.
Ingredients
Directions
- Chop tofu. Stir fry tofu and vegetables.
- Mix coconut milk, green curry paste, fish sauce and lime juice together. Whisk until paste is dissolved.
- Pour mixture into wok with tofu and vegetables. Heat through.

Very nice! Even better when topped with fresh basil and mint, since they seem to up the herbal "freshness factor" I associate with Thai food. The recipe is fine as it is, but if I were going to modify it, I would add a few lime leaves, a few slices of galingal root, and substitute vegetable broth for the coconut milk... but then its Jungle Curry, not Green Curry.

I substituted oyster sauce for fish sauce. Best thrown-together curry ever. I recommend Uncle Ben's basmati rice you can steam in the microwave to have with this.
