Green Eggs and Ham
An easy breakfast bake when you have company.
Ingredients
Directions
- Pre-heat oven to 350 °F (175 °C).
- Combine flour, butter, cottage cheese, cheddar cheese, and hot sauce in a food processor or blender.
- Add spinach and pulse briefly. You should be able to see small chunks of spinach in mixture.
- Line muffin tin with ham slices (1 per muffin cup).
- Pour 1/3 cup egg mixture into each muffin cup.
- Bake for 20 to 25 minutes or until toothpick comes out clean.
