Sweet and Sour Red Cabbage

A tasty vegetable dish of red cabbage and apple.

Directions

  1. Finely slice the onion and saute gently with the garlic in the oil until soft and browned, not fried.
  2. Add the finely sliced cabbage, and stir for 5 minutes, then add the wine, vinegar and sugar.
  3. Remove from the heat and add the sliced apple (peel the apple if it has a tough skin). Add salt and pepper to taste. Stir together.
  4. Seal the ingredients into the a flameproof casserole dish, using a piece of foil folded into 4 under the lid.
  5. Cook at 160 °C for 2 hours, stirring halfway through.
  6. When ready, the cabbage should be almost sticky and slightly caramelised.
  7. Notes: suitable for a slow-cooker and for freezing.

Reviews 
This a variation of a traditional recipe called 'blaukraut' (or 'rotkraut') that my lovely German mother-in-law would cook around Christmas (or Weinachten). Her variation would include a sprinkle of juniper berries and a few cloves, as well as a good handful of fat sultanas. I went on to add (a lot of) port and stir in tablespoon of redcurrant jelly. Both mine and her recipe uses butter not sunflower oil, which I guess is less appropriate around here, but it doesn't half add to the flavour! Try it with a baked ham (gammon) and a really good fruit-based chutney, like apricot and orange. If you're wondering why 'bluakraut' - water the cabbage is rinsed in changes to a magical sapphire blue.
