A wonderful low carb snack idea that you can have all day, but are yummy warm.
Ingredients
Directions
- Slice zucchini in 1/2" slices.
- Dip in egg mixture and roll in the crushed pork rinds and grated parmesan or asiago cheese.
- Fry in the olive oil and butter on medium heat.
- Let cool on paper towel and serve.

I was excited about trying this recipe. Then I read pork rinds. Ah, definitely not. Yech. What is up with pork in everything? Im not religious (dietarily speaking) however I think my palate not only is put off entirely by the taste and smell, but its probably an evolutionary warning for potential trichinosis. (LOL must be a vigilant dieter ! ) Right if this recipe was written with "add breadcrumbs, panko or shredded potatoes" instead, then YES! Im in!

This sounds so yummy! Crusting with pork grinds is something I thought about after I bought a bag. Happening tonite!

Very good recipe. I used the spicy pork rinds and omitted the cheese. I had a really hard time getting the crushed pork rinds to stick though.

All Bran cereal crushed is a good coating.

I've been craving for fried Zucchini so I'm going to try this just leaving out the pork rinds.

You can't have pork rinds on South Beach, but sounds good!

I left out the pork rinds and added some nature's seasoning. They were really good.
