Turkey Sausage & Vegetable Soup

A nice, one pot meal you can throw in the crock for 10 - 12 hours and eat for days or freeze for later.

Ingredients

Directions

  1. Slice the turkey kielbasa (or polish sausage) cross-ways, to may 1/4" oblong pieces. Brown each side in fry pan.
  2. Brown the turkey sausage, in pan, remove grease, if any.
  3. Add the meat, green beans, corn (optional), carrots, celery, onion, chicken stock, spices, Worcestershire sauce, and a dash of liquid smoke, (except for fresh cilantro, to be added before serving), and fill crock with water.
  4. Cook on low for about 10 hours, add seasonings to taste.
  5. Note: you can add other vegetables and have fun with it!

Very nice soup and it DOES make a lot. Didn't change much, just used lower fat Kielbasa and Sausage. Recipe didn't mention the rice. I didn't have time to use the Crock Pot so put it in a pot on the stove and it was just fine. I approximated I had servings at 1 cup. My calories and other nutrition were also lower. Used white rice, not a fan of brown rice.

Sorry, didn't realize there was a request for a serving size here. Yes, I have a large crock. I'd say a serving size is 1 to 1.5 cups. Yes, this is a great weekend fix and then freeze into a "family size" meal and individual meals for easy lunches later! Feel free to message me. :)

really good, lots of soup, but 24 servings....wonder what size each serving is. I ended up using my electric roaster as my crock pot was too small.

this makes the biggest pot of soup. it will last you all week and it's really filling for when you have those "hungry" days.
