Directions
- Couper la courgette en rondelle et en mettre 16 de côté.
- Cuire le reste de la courgette à la vapeur pendant 10min environ.
- Mixer la courgette y ajouter la crème, le sel, le poivre, le basilic et le vinaigre.
- Mixer à nouveau quelques secondes.
- Battre les blancs en neige et les incorporer à la préparation à la courgette.
- Dresser dans quatre verres en alternance couche de mousse et deux rondelles de courgettes
- Laisser reposer au frais au moins une heure.
