Frittata Vegana di Ceci e Zucchine
È una farinata di ceci con aggiunta di verdure (in questo caso zucchine ma si possono aggiungere anche spinaci, biete, asparagi, etc) semplice e gustosa, ottima anche fredda.

- Preparare una pastella con la farina di ceci, l'acqua ed un pizzico di sale fino ad ottenere un composto non troppo denso. Lasciarlo riposare possibilmente tutta la notte.
- Lavare le zucchine, spostarle e tagliarle a rondelle sottili e, insieme alle cipolle tritate finemente, farle rosolare in padella con 4 cucchiai di olio e poca acqua da aggiungere poco alla volta.
- Quando le zucchine sono abbastanza stufate e risultano morbide, togliere dalla pastella la schiuma formatasi durante la notte di riposo, mescolarle dentro e aggiungere due cucchiai di olio.
- Accendere il forno a 200°C, lasciar scaldare la teglia, toglierla dal forno, ungerla e versarci dentro tutto il preparato. Rimettere in forno e lasciar cuocere fino a quando la frittata vegana non sarà dorata.
