My brother was serious bodybuilder years ago. As a child I can remember his feeding me protein shakes. Sometimeshe, an extremely muscular man, would practice a 1200 cal diet so his muscles would appear more defined before a competition. Maybe a protein supplement would help you?

If you eat enough protein and plenty of healthy fats, along with keeping the carbs low, you should be doing great at the gym. If you want some guidance/reassurance, you might want to read The Art and Science of Low Carbohydrate Performance by Drs. Volek & Phinney.
