Omg ladies and gents. I just made the MOST awesome thing ever w/ a zucchini.
Use a mandolin slicer on the thin noodle like plate.
(if you don't have one..omg...you have got to get one..this is one kitchen gadget, besides my coffee maker and my counter top grill, that I can NOT live w/o.)
so anyway..using the noodle plate (whatever it's really called idk..) or you could use your cheese grater on the largest hole side..and basically make noodles. I used butter flavored Pam spray, heated up my skillet..dumped in the "noodles" and cooked for a few..just long enough for their color to lighten or become translucent.
Then 1/4c. shredded cheese of your choice and stir that around a bit as you slowly add in about 2tbsp of heavy whipping cream.
basically I made mac and cheese type stuff..
cook a bit longer stirring on low heat so not to scorch the cheese..add salt and pepper and done! dump in a bowl but try to eat right away..zucchini has high water content.
