Watching so many videos looking for some savory keto dishes. Had one zucchini left in the kitchen and was searching for inspiration. I needed to do something with it, so finally landed on Croquettes. I also wanted to cook up the last pack of bacon so I could use in salads this week.
My sister in law had done lime juice in sour cream for Taco Tuesday over the summer so I knew I wanted to experiment with it too.
OMG you guys!
Croquettes Simply made with 2 eggs, almond flour, spices and mozzarella cheese fried in a bit of oil. Then topped with lime sour cream sprinkled with bacon was so incredibly delicious I was hooting!!!

Pandemic Massive Weight Gain!
Gained over 90 pounds in 2 years up to 396.4. shocked 😲
Today down to 358.0.
No No Boo Boo No! Angry at my and the difficult journey.
My fat cells were waiting on the wings!

Back at it again after Pandemic Massive Weight Gain!
Like every one else I was feeling overwhelmed at the need to stay in sequestered away from the world. Worst 2 years of my life. Stepped on the scale near the end of May 2022 and saw that I had gained over 90 pounds!!!! 😩 Scale read 396.4
I almost fainted. Had to be wrong. Is that right? Yes. It was.
Dusted off my cooking books and turned off my GrubHub app.
Back to eating more raw food.
Back to Intermittent Fasting.
Back to lower carb.
Back to more water.
Back to walking.
Just get back to your firm mind set and weight loss focus.
June 1, 2022 I started in with 18 hour fasts that quickly went to 23 hour daily fasting. All summer Every day with out fail I have turned myself into a one meal eater making sure part of it is a large salad of choice. I've reduced the bread, cookie cake consumption but for the most part eat what I want, being mindful to eat more protein and raw food.
Today I am down to 358 in two months. It will increase I am confident but I am not shocking my body like I have done in the past with fast weight drops. I have walking goals which go up by 500 steps per week. Next week I must reach 5,500 per day for 7 days. In June I could barely walk 1,000.
