Chicken and veggie rice (spinach, tomatoes, spring onions, peppers and mushroom) with a splash of Hendersons. Used in stuffed peppers with sweet potato wedges, and left over rice for lunch!

I started the 5:2 today, just over 600cals for my first 'fast day', so not a bad start. On lunch I found this book in The Works for 2.50! v.useful and some nice meal ideas, incase anyone is looking for a 5:2 book that is a snip!
