Well that is a little bit better. Some of that water weight came back off. I think it was the salt.

I'm starting to wonder if something is wrong. I'm not sure why I am seeing gains instead of losses.

Although today's weigh in was a little disappointing, I won't let that derail my progression. I am making my meals for the next few days, and I am trying some new food and making some tweaks to the recipes to allow for some variety.
The meal plan is as follows!
Breakfast:
Egg, Bacon and Cheese Muffins (2)
Lunch:
Parmesan Crusted Pork Steak
Dinner: Bratwurst with Onion and Green Bell Pepper
Snacks:
Sugar Free Jello (Cherry)
Almonds
Pork Rinds
String Cheese
That will set me at 1928 calories, which leaves me room for a snack if I find myself craving something at the end of the day. With an estimated TDEE of 3,100, I am aiming for 2,100 or less calories for the day.

I am a little disappointed that I didn't see some type of loss today. Admittedly I ended up snacking on sunflower seeds late into the night, and that definitely has a lot of sodium and might have cause some water retention, but I would still have expected a loss in the end.
Based on the week's trend, though, I ate an average of 2,100 calories a day lost, based on the average weights for the two weeks, two pounds exactly.
That seems to support the previous estimate of a 3,100~ TDEE and a weight loss of two pounds a week at 2,100 daily calories.
However, I showed as low as 264.1 pounds a week ago. If we didn't average the weight and calorie intakes for the last two weeks for comparison, it would appear that I had regained 2.7 pounds.
What is keeping me from being worried is that last Sunday I was suffering from symptoms from my ulcer suddenly relapsing which may have netted some unusual weight loss, while the exact opposite is happening now which may be causing some unusual weight gains.
