Why not put those veggies in some broth and make a nice soup? Make your own "Subway" and load up a sandwich with lettuce, tomato, onion, peppers, pickles, etc. Stir fries are one of my favorites. And salad doesn't have to be boring if you change up the combination of veggies you use and top it with some grilled chicken breast or a little parmesan cheese. You are at a pretty high point range right now, like me, so you have lots of points to use to dress up the 0 point veggies. And there are so many other options to choose from to fill you up. You don't have to go nuts on veggies every day. Keep the faith!
