It's a cold, and blustery day; just seein' the snow, comin' down like that, makes you say, "I ain't goin' no where"!!! So, I won't. I'm staying true to my low carb lifestyle, with an occasional condiment glitch now and then; but never straying too far. Normally I wouldn't let the snow slow me down, but the cold is getting into my knees, which can, stop you cold; pardon the pun. LOL That being said, I won't be working out today. I think I'll try my hand at making a quiche, tomorrow. It won't be crustless, I'll use an almond meal crust, which I've never made before, and throw some spinach, bacon, and feta cheese in it, just to make sure it is burstin' with flavor. Who says low carb it boring!? When you dare to go outside your comfort zone, the possibilities are endless. Have a great day everyone! :-)

What I do for crust": I spray Pam in the dish, then sprinkle flax meal or almond flower over it. I turn the dish until it's coverd, what does not stick gets discarded. Stay warm and enjoy your quiche. :)

Hey ShyGuy... don't know where you live, but you want to talk about cold... it is 15 degrees below zero at my house this morning. Brrr. I made a similar quiche last week, it was delicious.

Thanks for the tip on the almond meal crust, I wasn't sure how I was going to do it, I just was. :-)

Hey another thanks for the crust idea, I melted butter into almond flour for mine but didn't really like the way it turned out, gonna try your way Gigi39--hope your quiche was tasty, ShyGuy!

This was a day where I would have liked to stay in bed or at least at home as well. But no way to do so. And it turned out to be pretty good. The drive home though was a mes. i am so thankful that I am able to shift gears in my car. Had to go slow on really icy roads but made it - home sweet home. Wonder how it will look in the morning. They said <1 inch of snow but that's what we have already.// Anyway, your quiche sounds great. Could you post the recipe so I can give it a try as well?// Have a great evening :-)

Jozette, I'll post it tomorrow, as I put it together; just know, I've never made a quiche before. I got the idea from Gigi39, who made one last week, so this will be a first for me with no gauarantees of results, but I'm a good cook so, no worries. LOL

Its always fun seeing what you come up with. No need to be boring is right! I made a chicken salsa soup last night - about 10NC per serving but it warmed me right up and chased away the nose nonsense. Yay for playing with our food!

It didn't, at least not yet. I got lazy and opted for fried pork chops, and zucchini noodles with a garlic alfredo sauce. I'll try to make the quiche today.

That's okay but post it in big red letters once you have made it. // I made some flax bread today, wow, I like it a lot. Had some Teawurst, a German spreadable hm, what is it? Something like liverwurst, just made different, for sure not with tea *lol*. Needed some bread to go with it and thought I try the flax-meal bread. had MIMs before but they are nothing compared to that bread. It was such a wonderful treat.

Jozette, my quiche turned out great! It was full of flavor and filling. Not bad for a first effort at making a quiche. I'll post the recipe tomorrow. The only changes I would make, which isn't really necessary, but would make it even better, would be to use an applewood smoked bacon, and an ounce or two of caramelized leeks. I'm very pleased at how it turned out, but I'm always looking for ways to make my recipes even better. :-)
