I enjoy experimenting with recipes, so today I'm making some experimental meatballs. They are chock full of ingredients that should make them very tasty, and being as low in carbs, as they are, they were dreamed up as a snack. I've included extra lean ground sirloin, barbecue pork rinds, parmesan cheese crisps, basil pesto, garlic, Italian seasoning, black pepper, and an egg. I'm baking these, and though I can't remember the last time I actually made meatballs, I'm hoping this recipe works; if not then back to the drawing board. :-)

The taste is there, but I probably baked them a little too long. They are not golf balls, but are lacking the moisture I usually add to my meatloaf, with the addition of fire roasted tomatoes. To keep the net carbs down, I'll probably add roasted red bell peppers, the next time, which will not only add moisture, but also even more flavor to these little gems. I'll also lower the cook temp and the cook time as well. In the meantime, they are still tasty, as is, and will make an awesome addition to this Friday's Za! Frittata!, which was so good, last Friday, it deserves an encore appearance on my menu.

I made meatballs with a cube of cheddar in the middle, -they were very good. Maybe an idea?

The taste was there, but they were a little dry, probably from baking them a little to long. I haven't made meatballs in years, so some adjustments will have to be made in my cooking time, ingredients, and maybe the temp at which I bake them.
