Every once and a while I decide, on a spur of the moment, to make some soup. That's what happened tonight. I call it Hodgepodge Chicken & Vegetable Soup, and used whatever veggies I happened to find in the fridge tonight; in this case it was broccoli, zucchini, baby bella mushrooms, shallots, smoked chicken, an egg and some chicken broth. I added a few seasonings, as well, and it turned out great. It was a great way to use up some leftover fresh veggies, and I'm sure I'll be making it again; however as the name suggests, the recipe will change every time I make it. If I get into the habit of making this, I may change the name to My Saturday Soup; the possibilities are endless. :-)

Nice, I've made it soup days a regular. Cost effective plus healthy and leaves the down home aroma. Make your own stock as the base. Freeze xtra stock in ice cube trays or small containers and make chic-tofu veggie soup, so tasty

I found a recipe that involved putting cheese in it. You need to use a strong flavoured one that dissolves rather than going all like elastic, if that makes sense. Anyway, it turned a good soup into a fab soup and I have used it in other soups too. I just happen to be lucky that the soup I chose, behaved in the way required. Perhaps worth a try?

I just made such a soup this week. I call mine Stoup. I can't claim this name as my own as I heard it someplace else. Ha! It was thick. It is a cross between soup and stew. It is a fantastic way to use up vegetables in the fridge before they go bad.
