I've been trying to stick with mostly fresh/raw foods to keep calories and sodium down. But I'm getting bored with it. I need some ideas for simple and tasty combos that don't add a lot of unnecessary calories. Has to be easy to make too since I have no time for cooking!

Hey Sunrise, you look as though you have been doing well, even though you are bored.
I like my food warm and comforting and these are my faves this week (they are one pot cooking and focus on balanced meals because I tend to forget carbs and then really crave them :-) and then binge). I make enough in the one pot to have then and leftovers to portion up and put in the freezer (and someone told me that oats release serotonin and makes you happy, so I have them for brekky as porridge and as oatcakes for lunch:
Lentil Soup & 2x Oatcakes
surprisingly warming and filling
Ingredients
1 serving garlic
1 serving red split lentil
8 servings oatcakes
1 dash salt
1 tbsp paprika
1 dash black pepper
1 cube stock cube
2 cups chopped carrot
1 cup chopped onion
1 chilli pepper
1,000 ml water tap
Directions
soak lentils as packet directs
place everything in saucepan and boil for 10 mins
reduce heat and simmer for 30 mins, then liquidize and serve with x2 oatcakes
Courgette Soup & X2 Oatcakes & X20g Cheddar
Ingredients
8 servings oatcakes
1 dash salt
80 g cheddar
1 dash black pepper
1 cube stock cube
4 cups chopped courgettes
1,000 ml water
Directions
place all in saucepan
bring to the boil
reduce heat, simmer for 5 mins then liquidize and serve with x2 oatcakes with 10g cheese on each
Porridge With Oatbran, Honey & Almonds
Ingredients
1/4 tbsp honey
8 g almonds
10 g oatbran
25 g oats
150 ml skimmed uht milk
Directions
weigh oats, bran, milk into container
microwave for 3 mins
add honey and almonds
Good luck, don't forget you can adapt the recipes on FS, make them your own and add them to your own cookbook once you have cooked, portioned and weighed your own prepared meals.
