Seems I am still having trouble getting in my net carbs from vegetables everyday, I think part of my problem is that I have had such a misconception for my whole life of no vegetables for breakfast, so now I need to find something for breakfast that I like that can get me around 5 veggies carbs.
Hoping that when I weigh in this week that I will have dropped a few pounds, at least on my last weigh in I hadn't gained any but still discouraging to be working so hard and not see the scale move.

LOL on the veggies for breakfast. Let me know how that goes. You could always chop up peppers and put in eggs in the morning - I don't do eggs much and I don't eat veggies in the morning - I would if it was on pizza - lol but thought that the suggestion might help.

Lately I've started making side dishes of sauteed brussels sprouts and onions (I love brussels sprouts!), wilted spinach, kale, mustard or turnip greens... things like that. Just season very simply with salt, pepper, maybe some garlic powder. They give you a bunch of fiber and a ton of nutrients for very little quantity... a few cups of spinach or kale wilts into a VERY small amount of cooked greens so you don't feel like you're munching away forever to get your veggies in. I just cook them up at the same time as I'm cooking meat/eggs, or often I'll just wilt them in the grease of my bacon. Very tasty.
