Has anyone ever used Ground Oatmeal as a substitute for breadcrumbs in recipes? I'm considering making an eggwhite quiche type thing for dinner but I don't know how well its going to stick together without the breadcrumbs and Yolk of the egg.

Sc-- I did it twice, once as pancakes and once as banana bread-- it worked pretty good for me-- I put in too much baking powder and it tasted funky-- note to self on that one! I am considering using it in tofu meatballs too!

I've also used ground almonds. I toast them a bit in the oven and then throw them in the food processor until finely ground. You can use it in lots of things.. I've made cakes and cookies and breads with it. It's actually really good and I still occasionally make the cakes with it.
