I don’t know. Feel like I’m filling some sort of void with overeating. During the day it’s fine because I’m at work and have meal prepped healthy meals but then at night I feel the need to stuff myself to the point of being uncomfortable and bloated.

Been there. Slow and steady habit change works best for me. . Perhaps you are trying to change too many things at once? I find it effective to make a couple of changes at a time, allow myself some time to adapt, then add a coupe more.
