there is no such thing as perfection. maybe stick with colorful breakfasts for a while! after a month, add in 1 or 2 veggies with dinner too. when that is easy, then improve from there. it's a staircase, not a mountain.

Your food looks great. You obviously have the skills! Maybe try pre-cooking some things for dinner. I pre-cook (chicken, sweet potato, quinoa) and pre-chop/prepare fruit and veggies for the week specifically so that I can make my meals quick - 5 or 10 min food prep per meal. I have about a dozen glass storage containers in the fridge with my food prep. "Cooking" is usually puting things into one or two pyrex dishes and baking for 30 or 45 min. This requires me to grocery shop and food prep for the week which takes a few hours. Every month or two, I'll do a longer food prep - usually cleaning and freezing berries, or cutting/prepping fish or beef for the freezer. Last year, I bought a 5 cubic foot freezer at Home Depot for $160 and it's been a lifesaver, in terms of fast meals and grocery shopping. I generally hate food prepping and cooking, but I tell myself that I have simplified it as much as I can, and feeling good physically and mentally requires healthy food, so I do it and get it over with, and spend other hours in the day with things I like to do.
