Breakfast was leftover food from the dinner I had on Sunday. I just added 3 cups of fresh baby spinach, tossed in a handful of chopped purple onions, cut up the sausage links, and fajitas, then added the shrimp at the last few minutes, fried 2 eggs and called it breakfast. I put half of the mixture in another container and plan on having that for lunch tomorrow, at work. I am planning on having spinach and sliced strawberries for lunch today. Dinner will be baked chicken breasts and probably shredded cabbage (think coleslaw blend) with skinny girl poppyseed dressing.
