So this is the grim reality of my life at the moment, 150g minced chicken,85g of rice's cooked in paella seasoning and some frozen veg.

Cool. Thought I should share my misery, we are all in this together. Trying to hit 250g of protein a day is a chore in itself. I have however discovered that 2 scoops of salted caramel Serious Shredz protien with 250g of fat free yoghurt taste exactly like a cheese cake filling so I shall be making a individual versions and using skinny zero calorie caramel sauce and a wheat wheatabix base.. pics will follow.

yup, that's a lot of protein but sounds like you are thinking out of the box. Good luck!

Yeah I'm sitting at 17stone 8 and want to drop down by a stone but maintain as much muscle mass as possible. I have a spinal injury so cutting and bulking isn't an option but I can maintain the muscle I still have and just slowly chip off the fat.Slowly appears to be the correct word. Painfully slowly..still trying to eat about 2800 cals a day.

Thats sensible. Personally, I think its better not to do the extreme bulks and cuts but to maintain the long term, with the odd mini bulk/cut thrown in, for the bodybuilders amongst us. Me, well I am just trying not to eat too much in general whilst keeping fitness up.
