There's been so much going on this weekend, sorry I haven't been on much to reply.
Recipe for these loaves: 100g whole grain rye flour, 25 g milled chia seeds, 150g whole grain oat flour, 130g freshly milled hard white whole wheat, 400g King Arthur bread flour, and 20g gluten.
320g sourdough starter, 10g salt. 450 ml water.
I do have to adjust the dough by either adding a little extra flour or water to the kitchen aid mixer while I mix at speed 2 for 8 minutes.
I let it rise for 3 hours. Then I separated it into two loaves and put the loaves into bread pans (sprayed with canola oil). I stuck them in the fridge over night so I could bake them fresh for dinner the next day. When I pulled them out I let them rise another 3 hours preheated oven to 375 and baked for 45 minutes.

Karen and Jen, there's still some of the second loaf left for at least one more day. Any time works for me. Lol. We've got plenty of tea and I'll be making more bread in another day or two.
