I made lots of salads today .. French beans and red peppers, red cabbage, carrot and corn coleslaw, peach, watermelon and cucumber with feta and mint, beetroot, red onion and put lentils that also got some of the feta and mint action. Crispy tofu that tastes remarkably like KFC and is known in our house as no clucks given chicken 😄
