I find I am trying to use up food in my fridge these days. In the past cooking felt like too much work and food would go to waste. But I am finding even simple, easy, cheap things like this hash can be great. Never would have occurred to me before that cooking doesn't have to involve some complicated recipe and be an ordeal.

I try to make extra food and freeze the extra after eating. The days where I don’t want to cook I can just pull things out to defrost
