If you add a pinch of tumeric, you'll get no real added taste but the allure of the traditional yellow colour of egg salad (I'm a chef :)

I hadn't thought of turmeric, JustWinnie. When I was on a low iodine diet while being treated for a thyroid condition and wasn't allowed to eat yolks, I found that adding nutritional yeast to my egg whites before I scrambled them not only gave them some yellow color, but also gave them more flavor

I love egg salad. I usually make mine with a whole egg and one just egg white. That way there is a little yolk to give some cholesterol.

John I know many people including myself who have improved cholesterol levels by change in diet. Our livers make all the cholesterol we need for health you don't have to include it in your diet. From your bio you want to lower LDL levels.... one great way to do that is to include more healthy fats in your diet. So add avocado, salmon, tuna and olive oil. Sure yolks have nutrition but you can get that from other items and still meet your objective.

Why does every photo of how a person eats eggs have to start a debate about cholesterol? I've seen it on so many photos of eggs or egg whites on this site and I guessed before I read the comments there would be people giving advice, telling the poster egg yolks are great for you, that as much fat as you like is good for you...not too far off. Let people eat how they want. We're not all on the same diet, some people might have restrictions you don't and personal advice/guidelines given by a professional who knows their medical history, not you, some stranger on the internet.

I so agree with your statement, John, "don't give out medical advice" especially if you are not an MD, don't know the patient's history or really, anything at all.

Winnie, my grandmother used to add turmeric to fried scrambled tofu "eggs" to give it the yellow color. I hadn't considered it for this. Thanks for the suggestion.

McBubbles our bodies make cholesterol whether we eat it or not. I'll keep to my nutritionist's and my doctor's advice on how much of it to eat.
