Sure..... I had some leftover pasta, added left over Pico de Gallo (it's a chopped topping from Mexican cuisine made up of tomatoes, onions, fresh cilantro, garlice, lemon juice & salt & pepper), crumbled feta cheese, lots of green onions & diced sweet red peppers. I used the juice from the Pico and added Kraft classic Herb dressing (my favourite dressing). Of course use your favourite dressing & preferred veggies.
