Made some of those Belgian Waffles this evening (I'm going to freeze the rest). I made mine with 1/2 cup flax meal and 1/2 cup vanilla soy protein powder, 1 tablespoon baking powder, 2 small packets of Splenda (equals 2 tablespoons), 1/2 teaspoon salt, 1/4 cup heavy cream, 3 large eggs, and a little over 1/2 cup water. They were SO yummy! My husband really likes them. I put in the recipe and one waffle is 1/8 of the total. We bought a little waffle maker today (and a mixer), and I think my waffle maker makes them pretty thin. But still really, really good!
Of course, because I changed my dinner plans at the last minute (I was supposed to have broccoli and cauliflower with my steak tonight, not waffles, eggs, and bacon), I only got about 10.5 NC from veggies today. I would have gotten almost 14. I don't know, I think the trade-off was worth it! I'll just try to get a few extra tomorrow. :)
