I love vegetables. I eat them like crazy. I cover a small aluminum rimmed tray with parchment paper, use a Misto and spread olive oil on them, salt & pepper them and roast at 450 . Parchment paper just speeds up clean-up. You can usually throw it away and not even wash the pan. All veggies taste great roasted or stir-fried. I have a few recipes on my blog, www.mrsratfirelosesweight.com there is a category button on the right side that you can push the 'Vegetable Button" and access what I have entered. The blog is pretty know, only 50 posts on it, but I keep adding to it- it is about dieting with NO PAIN, cooking fast and easy, healthy recipes which are low fat.

Oh, and for butter if I need it, I use Brummel and Brown yogurt spread, available in the butter section of the store. It is good and it is only 45 calories a tablespoon. Good luck!

I completely agree with MrsRatfire! I also throw some into my smoothies.. anything from spinach, kale, carrots, cucumber to celery - the fruit I use cover up much of the taste (especially if you throw a banana in the mix!) Good luck!

Roasted veggies are good, I'll second that opinion. And I'll also second putting them into smoothies. I use protein powder and unsweetened cocoa also in mine, then you can put just about anything in it and it still tastes like a chocolate shake. :)

Stupid question, but I accidentally put the wrong weight in when I started this diary 4 days ago and it should have been 178.8 instead of 188.8 is there any way to make corrections because now when I put my correct weight it shows that I have lost 10 pounds and that is not the case.
