My mini Shepard's pies was a hit!! (one person said I needed more garlic) I talked to a guy who loves to cook and he told me how to make it low carb. Skip the biscut and put it in a cake dish. Mashed Cauliflower with Parmesan cheese on top. It turned into a discussion of trying out using a hollowed out green pepper instead of a biscut. On the down side everything that was brought was FULL of carbs!!! The people who signed up for salads and veggies trays brought potato wedges, pizza and cheese cake instead!! I admit I ate one shepards pie and someone brought a deli tray so I had some olives. I did have some chicken with the skin peeled off. I am having a nice big bowl of veggies for dinner. Earl sent me a good low carb dish to try for next month and I will bring that along with a salad. This week has been difficult but I am determined to master this and get my meal plan right. I instantly feel it when I eat something heavy on the carbs. I want to feel great and look great too!
