1. Break 250g lettuce into stalks at stem, cut each stalk into 4-5 segments
2. Dice 5-10 cloves of garlic
3. Throw lettuce in boiling water, add a bit of salt and oil, boil on high for 45sec
4. Cool lettuce in cold water, drain, and set aside for use
5. Add a layer of oil to pan, throw in garlic and fry until golden
6. Add in oyster sauce and light soy sauce, stir
7. Add 100ml water, salt and sugar
8. Reduce the sauce until volume looks
appropriate
Optional: add starch to thicken sauce, dark vinegar, msg
9. Place lettuce in a slightly deep dish and pour sauce directly on top

Thank you so much for posting the recipe, this looms amazing! My mom left a bag of Romaine hearts at my house, and that isn't the sort of lettuce I typically eat. Your timing on this is perfect =)

It’s quite healthy compared to the usual stir-fried vegetables, since the only oil needed is for frying the garlic.

I remember going to Best Taste in Oakland's Chinatown back in the 90's and having the roast duck rice plate and they would serve boiled or hot lettuce as the side. But this is a step up and I would really enjoy this dish (minus the rice). Thanks for the posting.

@Kit I’m sure you can still find that in your area if you Yelp “Cantonese barbecue” haha, roast duck, pork, etc. Some places replace the boiled lettuce with bok choy.
My gf and I eat this Guangdong province “fast food” meal (roast duck rice plate) at least twice a month here in China.

I’m definitely going to try! The only cooked lettuce dish I have had was the “dark romaine” omelette my mom used to make us... this sounds great!
