Eek! Dinner cooked with my husband, a Julia Childs recipe. Salmon cooked in vermouth (we used absinthe), topped with 2x fish mousse (cod cheeks, scallops, egg whites, cream, cognac) & 2x hollandaise mousselline. The result wasn't worth the calories and £.

The 2x is because the recipe as for 6 people and I adapted for 4 and 2, the minimum order for the white fish and scallops was for 4 people. I also decided to make the 4-person amount of hollandaise. So we had normal salmon fillets but twice the amount of fish mouse and hollandaise. The hollandaise included loads of butter and cream and so I feel stuffed and foolish now. I gotta somehow learn not to cook so much...

Clare, I don't know if we misread the recipe but there was too much alcohol taste in the salmon and hollandaise. We didn't think the fish mousse added anything (not flavourful). I suggest trying it without.
Julian Childs' beef bourginon recipe is fantastic, though. Mega yum.
