I made my first MIM tonight. While I have to objectively say it was poorly done on my part, it was still amazing! The texture of something bread like is particularly satisfying.

I should have ground my flax seeds longer as they were not very smooth texture-wise once cooked, resulting in bitty crunches that weren't really supposed to be there. Additionally I substituted 1 tsp coconut oil for 1 tsp butter because we're running low on butter, and being excited about my first purchase and use of coconut oil didn't want to wait to try it in a MIM. Probably not the best call moisture-wise, but still... definitely going to try MIMs again!

I think tomorrow I'll try the pumpkin MIM recipe!
