My fast500 lunch today is most welcome.Roughly 200cals. I might add a little homemade sauerkraut for some healthy fermented crunch.

Sauerkraut is really simple. I finely shred a white cabbage, weigh it, then add 2-3% of the weight of cabbage of table salt. Massage it into the cabbage in a big bowl then place a plate on top and weigh it down with something heavy for a few hours at room temp. Occasionally massage it to make sure the salt is evenly distributed. After a few hours when the water starts to pool in the bottom of the bowl, I stuff it tightly into a very clean, large jar then top it up with a bit of salt water. The cabbage must be under the surface of the water at all times. I then place it on a work surface in the kitchen for a few days at room temp lid open but covered. Bubbles with start to form and you need to keep pressing it down. After a few days it's ready to go in the fridge. You can do this to lots of veg and some fruit. 😋
